I think I'd be checking the handbrake warning switch.
If the light does not come on there is obviously a problem there.

I've worked out what's causing the bleeping, (but not how to fix it).
The bleep is actually the 'handbrake on' warning circuit getting confused, (as OlJeffers suggested). It's not bleeping because the handbrake is on or because the brake fluid level is low. I would have realised the correlation between the lights and the handbrake earlier if the previous owner hadn't put bluetak over the handbrake warning LED!
The handbrake light comes on with the other ignition lights and goes off when you start the engine. It does not come on when you apply the handbrake of if you remove the wire to the handbrake switch and earth it. When you switch the lights on (side or dip or main), the handbrake warning light comes on. Then, when you pull away, it starts bleeping at you, (presumably because it thinks the handbrake is on).
There is continuity between the wire at the handbrake switch and the wire with the same number at the speedo (for the handbrake warning light). There is also live feed at those wires, with the ignition on and whether or not the lights are on. My circuit tester is an LED one (green for earth, red for live). The live feed only dimly lights up the LED red, so I'm assuming that there is a weak short somewhere and when the handbrake switch is earthed, it breaks the contact with that weak short, (otherwise it would blow a fuse or start a fire).
I would be interested in any suggestions, but I'm hoping that I won't be investigating any further, as I've just sold the car to a friend who is not bothered by the bleeping. I hope it doesn't come back for me to fix but if it does, I'll let you know what I find.
